Characteristics

AOP Cahors Malbec

Eighth terroir or white mamo-limestone plateau. Plateau soil made up of lacustrine limestone from the Oligocene and Miocene dating from 30 to 5 million years ago (3rd era).
The clay-silty soil is supported by lacustrine limestone from the Oligocene.

A history

Wine produced using traditional vinification in our Research and Development microvinification cellar. The hand-harvested harvest is received and then destemmed using equipment allowing the separation of the berries and the stalks thanks to an oscillating movement allowing the integrity of the berries to be respected and to avoid any excessive crushing. The berries are then sorted to select only the best. Alcoholic fermentation between 21 and 28°. A reasoned post-fermentation maceration is carried out. Aging in barrels of 225L over 20 months. Timbers made of French oak reveal the best profile for our product.
